Aeolus is a synthesised (i.e. not sampled) pipe organ emulator that should be good enough to make an organist enjoy playing it. It is a software synthesiser optimised for this job, with possibly hundreds of controls for each stop, that enable the user to "voice" his instrument.

It can play MIDI files by converting them into PCM waveform data; give it a MIDI data along with digital instrument data files, then it synthesizes them in real-time, and plays. It can not only play sounds, but also can save the generated waveforms into hard disks as various audio file formats.
xsynth-dssi

The xsynth-dssi package contains the Xsynth-DSSI plugin, a classic-analog (VCOs-VCF-VCA) style software synthesizer with an editor GUI. Xsynth-DSSI was written by Sean Bolton, and was based on Steve Brooke's Xsynth code, but has since aquired polyphonic operation, band-limited oscillators, a better filter mode, and velocity-sensitive envelopes.
